Almiral de la Font
Paul and Nicola Christoforou acquired the Almiral de la Font estate in 2001. Inspired by René Barbier, a key figure in the revival and growth of the Priorat wine area of Spain, Paul set about regenerating the centuries-old custom of wine and cava making at Almiral.
Local expertise
Paul soon discovered that the grapes being grown in the vineyards in the estate deserved some serious time and dedication. Paul teamed up with Alberto Marti, the general manager of the vineyards surrounding Almiral. The Marti family, represented today by Alberto and his father, have been applying their knowledge of Spanish winemaking to the climate and soil of Catalonia for generations. This has contributed to the production of its special and unique cava and white wine.
18th century tradition
Each year, only 20% of the best grapes are used in Almiral de la Font wine and cava. The Almiral estate comprises over 340 acres of land situated in the Penedès wine growing area. With its mosaic of different soils (mostly of a calcareous type) and microclimate, Almiral produces a graceful and sensuous wine. The origins of Almiral cava and wine go all the way back to the 18th century. Today, more than 35 acres of southern facing vineyards are dedicated to wine growing. The property has been associated with Cava production for several decades and still houses the original wine presses.
Careful grape selection
At Almiral, we have been cultivating our vineyards in an ecological way since 1890. Only 20% of the available grapes are used and these are chosen before harvest from the best vineyards. Manel Avino, owner of local winery Can Ramon, adds his considerable experience to the choosing process - timing and choice of vineyards are central to the production process.
The process
Throughout August and September, we monitor the grapes and weather conditions to determine the optimum time for picking. Picking is done by hand in September in the vineyards of the Penedès Appellation and transported in small boxes to Can Ramon winery to avoid damage. The grapes are destemmed, crushed and transferred to large vats. The must is cleared by a settling process to remove solid parts such as grape skins and pips. The must is then transferred to temperature controlled stainless steel vats.
Grape variety
The grape variety grown from vines of between 25 and 45 years of age is principally Xarello. Aside from Xarello, Macabeo and Parellades are also grown. No preservatives or herbicides are added – only the grapes from the estate are used. Almiral de la Font Brut Nature is a boutique hand-crafted product with a very limited supply of no more than a 3-4000 bottles in any vintage.
